Welcome Summer (it is about time)! I was born on the first official day of summer (June 21st) so I have naturally enjoyed this time of year throughout my life.  It is a time when baseball is in full swing, the kids are out of school for the summer, and generally people are in good moods. This is also the time when families spend time together in the backyard, on vacation, on road trips, at parades and enjoying Americana.  My hope for all of you is that you get out there and enjoy yourself and your friends and family.  As Chicagoans (or suburban Chicagoans) there aren't many times that you can really enjoy being a tourist in your own city.  There's millennium park, the zoo(s), museums, ballparks, Michigan Avenue, architectural boat tours, walking tours, segway tours, beer tours, historic tours and just plain walking around.  Get out there and enjoy it. There are also tons of attractions throughout the Midwest that you can explore.  Off the top of my head, I can think of the Wisconsin Dells, Mackinac Island, Milwaukeefest, St. Louis, Detroit, Minneapolis/St. Paul, and even Cleveland.  All you need is a car and a little creativity and this summer can be one of the best summers of your life.  Life is what you make of it and something as simple as a little road trip to Indianapolis could actually change your life... in a good way. Last month's winner of the "guess the location" game was Mark Echales with the correct response of Holland, MI.  Mark will be taking one of those trips I mentioned above later this month by visiting Saugatuck, MI (which isn't too far from Holland, MI).  There's another option to see some great culture, have some great food and wine and take in the sunset just a short hop across the lake. Fun stuff for kids." Holland is in the western region of the Lower Peninsula of Michigan state and near both Lake Michigan and Grand Rapids.  As one would guess, there are plenty of Dutch folks that live around here.  Originally, the area was full of Ottawa Indians but eventually was settled by a group of Dutch Calvinist separatists who fled the Netherlands for economic reasons. This is a great place for adults but really, really boring if you are a kid without an electronic device to play with.  Trust me, I know.  There is a picture below of a couple of kids who were forced to wear Dutch clothing and you can see what the town does to kids... Hilarious find. Holland is home to about 170 churches all of which are a form of reformed Christian.  One of the churches here is famous for coining the phrase "What would Jesus Do?"  Holland is also home to a young mayor-elect  who was still attending Hope College there when taking office. The city is perhaps best known for its Dutch heritage, which serves not only as a part of the city's cultural identity, but the local economy as well. The Tulip Time Festival in May and various Dutch-themed attractions augment the nearby Lake Michigan shoreline in attracting thousands of tourists annually. YouTube star Casey Neistat wants us all to get real. The filmmaker's new app, Beme, is his attempt to create a social media platform that allows users to share moments in real time, without fixating on their phones and editing posts to death. Beme essentially takes the core values of Snapchat and presents a bare-bones version of it, stripping away the ability to review your posts or add filters and commentary. It is fun and a great way to document a trip in 8 second clips that are totally real. And Speaking of Gender Specific Bathrooms... Mexican Corn on the Cob - perfect for summer The best part about this is that it is unbelievably easy to make. It’s practically foolproof! Just simply throw it in the oven, roast it for about 45 min-1 hour in their husks, and then slather on that butter before sprinkling on the rest of the toppings. Easy. And if you’re not keen on some of the toppings, this is completely customizable to your personal preferences. Prep Time: 10 minutes Cook Time: 45 minutes Total Time: 55 minutes Yield: 6 servings This is the best way to serve corn on the cob, brushed with melted butter and sprinkled with chili powder, cotija cheese and lime juice! Ingredients: 6 ears corn, unhusked 6 tablespoons unsalted butter 2 teaspoons chili powder 1/4 cup grated Cotija cheese 1/4 cup freshly chopped cilantro leaves Juice of 2 limes Instructions: Preheat oven to 350 degrees F. Place corn, in its husks, directly on the oven rack. Roast until tender and cooked through, about 40-45 minutes. Peel down the husks. Rub each ear of corn with 1 tablespoon of butter. Serve immediately, sprinkled with chili powder, Cotija, cilantro, and lime juice.

Bring Back the FUN Stuff! For those of you who may not know it, May 1 is also referred to as May Day and it has a fairly notable history. From celebrations including flowers, spring and Maypoles, May Day has been around a long time. This is also the month of traditional "May Crowning" celebrations honoring Mary of Nazareth. Murphy testing the bulletproof vest in 1923  Banana Poke Cake Recipe Ingredients: 1 box yellow cake mix 3 eggs 2 packages banana pudding 14 ounces (1 can) condensed milk 1 cup water ½ cup oil Whipped topping Nilla Wafers, crushed  (optional) Banana slices (optional) Directions: 1.      In a large mixing bowl, combine cake mix, eggs, 1 package banana pudding, condensed milk, water and oil, with electric mixer until smooth. 2.      Grease (spray) a 9 x 13 baking dish, pour in cake mixture. 3.      Bake at 350 for 40-45 minutes. 4.      Prepare 1 package of banana pudding according to instructions, set aside. 5.      When cake comes out of the oven, poke holes in the top with the handle of a wooden spoon. 6.      Pour reserved banana pudding over the top of the cake after poking holes. 7.      Top with whipped topping. 8.      Refrigerate overnight. 9.      Crush Nilla wafers in bag, sprinkle on top of cake, decorate with banana slices if desired. 10.   Enjoy!
