Here we are at the beginning of June and the days are long and sun is high. Soon to be upon us is the summer solstice which is known in the north as the longest day of the year. Somewhere far away, people are experiencing their shortest day of the year. Interesting to think about that. Every year when we get to this part, I try to remind people of the many wonderful activities that come along right here in the midwest. Just off the top of my head...

Microsoft previews a new, totally redesigned Outlook for Windows app
Soon M365 subscribers will have the opportunity to upgrade to the newest version of Outlook. For most of us, this is the app where we live all day. The new version will be a drastic change for some users and wanted to give you fair warning. If you like what you have, keep it. If you want to stay current and be a little adventurous, upgrade.

Although it is the most well-known of the Greek islands, Santorini still has a lot to amaze you! First of all, it is rightfully sometimes called the “postcard island of Greece”, it really stands out from all the rest of the Greek islands (and there are VERY many Greek islands). Its red cliffs, white windmills, crystal clear blue water and blue church domes really are a treat for the eyes!
Today I thought I might share some of the lesser known fun facts that I have heard about the island over the years:
The island sits in a water-filled caldera of a massive volcano (you all know this by now, of course) BUT the eruption is thought to have ended the Minoan civilization on Crete!
Before it was called Santorini, this Greek island was known as Kallístē, which means “the most beautiful one”
Santorini is one of the few places on earth where you can visit white, black AND red beaches. This is because of the volcanic past of the island.
Although its climate is very special (rather harsh and dry), Santorini actually has a very flourishing vine industry! The vine here has a characteristic, unique taste to it due to this.
The name itself – Santorini – was invented in 1153 by the Venetians and was told to the Arab geographer Edrisi. It is the pronunciation of the words Santa and Irenene (Saint Irene), which was taken either from the name of the church in the valley of Therassia or from the name of the early Christian basilica in Perissa (which is not preserved).
Of course, the list goes on and on and on. Visit this place and discover more on your own! Actually, off season is the time to do such discoveries, as the ticket prices go down and there’s more time for exploration of the history and cultural places of Santorini! Trust me, this Greek gem will surprise you (and it will continue to surprise me, without doubt).

The Irish Cop...
A London lawyer runs a stop sign and gets pulled over by an Elderly Irish cop. He thinks that he is smarter than the old cop because he is a lawyer from LONDON and is certain that he has a better education than any Irish cop. He decides to prove this to himself and have some fun at the Irish cop’s expense!
The old Irish cop says, “License and registration, please.” London Lawyer says, “What for?” Irish cop says, “Ye didnae come to a complete stop at the stop sign.” London Lawyer says, “I slowed down, and no one was coming.” The old Irish cop says, “Ye still didnae come to a complete stop. License and registration, please” London Lawyer says, “What’s the difference?” Irish cop says, “The difference is,ye huvte come to complete stop, that’s the law. License and registration, please!” London Lawyer says, “If you can show me the legal difference between slowing down and stop, I’ll give you my license and registration and you give me the ticket. If not, you let me go and don’t give me the ticket.” The old cop says, “Sounds fair. Exit your vehicle, sir.”
The London Lawyer exits his vehicle.
The old cop takes out his baton and starts beating the living sh*t out of the lawyer and says,
“Daeye want me to stop or just slow down?”

Blue Cheese and Bacon Stuffed Peppers
3 medium sweet yellow, orange or red peppers
4 ounces cream cheese, softened
1/2 cup crumbled blue cheese
3 bacon strips, cooked and crumbled
1 green onion, thinly sliced
Cut peppers into quarters. Remove and discard stems and seeds. In a small bowl, mix cream cheese, blue cheese, bacon and green onion until blended.
Grill peppers, covered, over medium-high heat or broil 4 in. from heat until slightly charred, 2-3 minutes on each side.
Remove peppers from grill; fill each with about 1 tablespoon cheese mixture. Grill until cheese is melted, 2-3 minutes longer.
