Dog Days of Summer!

It is getting really close to the end of summer and every year it reminds me of the times when my mother would take me to the store to get school supplies.  It sucked.  As an adult with children it is a similar experience as the kids leave for college or return to school.  I still don't understand why they have to go back so many weeks before Labor Day.  In Wisconsin, I think they do it right.  Return after Labor Day and end in early June. Oh well.  People often feel a mix of excitement fo the remainder of the summer and sadness that the season is almost over.

 

However, we do have the fall coming up and plenty to look forward to with that season...college football, warm days and cool nights...enough talk of that for now.

 

August is when people wear flip-flops with sweaters or shorts with umbrellas, not knowing what to expect from the weather. In offices, it's not uncommon to see co-workers having thermostat wars, with some wanting to crank up the A/C while others are wrapped in blankets. 

 

People with birthdays in August sometimes feel like their celebrations get overshadowed by summer vacations and back-to-school preparations.  I don't really feel sorry for them.  I am just glad I don't have to go back to school.

 

Some notable things that happened in the month of August:

 

August 1492: Christopher Columbus set sail from Spain on his first voyage, eventually reaching the Americas.

 

August 1963: Martin Luther King Jr. delivered his famous "I Have a Dream" speech during the March on Washington for Jobs and Freedom.

 

August 2005: Hurricane Katrina struck the Gulf Coast of the United States, causing widespread destruction and loss of life.

 

August 1991: The World Wide Web became publicly available, marking a significant milestone in the history of the internet and communication.

 

August 1969: The Woodstock Music & Art Fair, a landmark counterculture event, took place in upstate New York.

Grilled Lemon Herb Chicken

 

 

 

 

Ingredients:

·     1 pound ditalini pasta , or other short pasta or shell

·     3 hard-boiled eggs , diced

·     2 celery ribs , minced

·     1 red bell pepper , seeded and minced

·     ¼ red onion , minced

·     ¼ cup sweet pickles , chopped

·     1 cup mayonnaise

·     ¼ cup plus 1 tablespoon pickle juice

·     2 teaspoons granulated sugar

·     1 ½ tablespoons Dijon mustard

·     Kosher salt and freshly ground black pepper

·     Chopped parsley if desired

Instructions:

1. Cook the pasta in salted water according to the package directions, Drain in a colander and rinse under cold water until cooled. Shake the colander to toss the pasta, and drain for about 5 minutes, tossing occasionally.

2. Transfer the drained pasta to a large bowl. Add the eggs, celery, red bell pepper, red onion and sweet pickles. In a small bowl, mix the mayonnaise, pickle juice, sugar, and Dijon mustard; season with kosher salt and freshly ground black pepper. Add to the macaroni and toss until evenly coated. Season with more salt and pepper to taste then refrigerate for 1 hour before serving. Sprinkle with chopped parsley to add a little color if desired.
