Once
again, spring is here and with that we have the celebrations of Passover
and Easter this month. Christians celebrate the resurrection of Jesus
and Easter represents the end of Lent.
Now
here is something that most people don't know. Easter did not start
as a Christian tradition...
The
name “Easter” was derived from “Eostre,” “originally a Saxon word (Eostre),
denoting a goddess of the Saxons, in honour of whom sacrifices were offered
about the time of the Passover.” This very fact causes many to wonder
if Easter is really a pagan holiday and if it should be celebrated by
Christians.
The
origins of Easter are wrapped up in a celebration of seasonal renewal that
has taken place in numerous cultures for thousands of years around the time
of the Spring Equinox. Some argue that even the Christian version of Easter
merely perpetuates a pagan age-old, familiar theme of resurrection rather
than honoring an actual person or event in history.
Hmm.
Further
research finds that our calendar (for many) used to have 13 months of 28
days each (364 days). The first day of the year being a celebration
of Christ's resurrection and a fertile spring upon the world (April
1st). However, and interestingly, we now recognize 12 months and use
April 1st as "April Fool's Day."

Toronto
is a terrific city filled with great, peaceful and obedient citizens.
Having recently visited there for a friend's birthday celebration, I can
attest to the friendly nature of the city and the people. I would
also say that the food I tasted was delicious. Expensive but
delicious.
One
thing that I will say is that if you travel there and like to have
cocktails, just drink beer and wine. Mixed drinks are very expensive
and weak. Alcohol (along with everything else) is very well regulated
as the government does not want their citizens having a drinking
problem. Probably not going to work but I give them an A for effort.
To
begin with, Toronto is really multicultural. You will clearly see a
multitude of races, creeds and cultures before your very eyes. There
was a lot of snow in February, it was cold and there were tons of people
out walking the streets (many with dogs in tow).
Until
2007, Toronto had the tallest skyscraper (CN tower) in the world.
This was eclipsed when Dubai build the Burj Khalifa.
Niagra
falls is a hop, skip and a barrel-roll away from the city. It takes
about an hour and a half to get there for the center of Toronto.
If
you are a sports fan, Toronto has seven major league teams, the most
recognizable being the Maple Leafs, Raptors and Blue Jays. Never a
dull moment there...
Although
you will see ice skating rinks all over the place in the winter, Toronto is
home to the largest continuous underground shopping mall in North
America.
Lastly,
Toronto ranks in the top 10 of the most livable cities in the world.
However, home prices and taxes are really high. Not sure what the
average income is there but it has to be high to support the cost of
living.

pound brisket
Marinade:
1/2
cup orange juice, 1/2 cup coke, 1 1/2 tbsp ground pepper, 1 1/2 tbsp celery
salt, 1 1/2 tbsp cinnamon, 1 1/2 tbsp sea salt, 1 1/2 tbsp garlic pepper, 1
1/2 tbsp oregano. Place brisket in a pan and marinade in a pan covered with
plastic wrap. Marinate in the refrigerator for 2 hours and up to 24 hours.
Remove brisket and let it come to room temperature.
Rub:
1
1/2 tbsp black pepper ground, 1 1/2 tbsp celery salt, 1 tbsp chili powder,
1 1/2 tbsp sea salt, 1 1/2 tbsp garlic pepper, 1 1/2 tbsp oregano. Apply
rub to brisket. Turn your smoker up to 225 degrees, place your wood chips
in smoker. Place brisket in smoker and your temp can be turned down as low
as 150 degrees and cooked for 12 hours. I like to make sure my brisket gets
to 184 degrees internal temp before removing it.
Finishing
Sauce:
1/4
cup brown sugar, 1/8 cup honey, 1/8 cup Orange juice, 1/8 cup ketchup.
Remove brisket from smoker after 12 hours or when it reaches 184 degrees
internal temp. Place brisket on aluminum foil large enough to wrap brisket.
Pour finishing sauce over the brisket and wrap brisket in foil. Place back
in smoker for 1 more hour. Remove brisket from smoker after that hour is
up, open foil to let steam out. Let the brisket rest for 20 minutes before
slicing to allow the juices to settle back into the brisket. Slice thinly
across the grain of the meat.
